Personal Pizza with 2 Ingredient dough

Using the recipe for the 2 ingredient dough you can prep 4 personal pizza's and this is a GREAT food prep item for your lunches throughout the week.

For the dough:

  • 1 CUP Self rising flour from Walmart $1.38 for a large bag
  • 1 CUP 0%  Fage plain greek yogurt $5.38 for a 32ounce container
  • 1 egg (used for the egg wash)
Point total: 3 points per pizza

For the pizza:

  • Pizza sauce ( I got mine at Wal-mart )  0 points for 2 Tbsp
  • Baby spinach 0 points
  • fat free cheese  1 point
  • chicken to top  0 points
You can play with your toppings.  Turkey pepperoni  2 points for 1 ounce.

I did not pre-bake the dough.  I added all of my toppings and baked all at once.  Preheat oven to 350 degrees while prepping dough.

  • Combine dough and Fage greek yogurt in a bowl.  I highly recommend lightly spraying hands with a tiny bit of olive oil and dusting with flour before trying to work with the dough.
  • Knead the dough to make sure the flour and Greek Yogurt is fully mixed.
  • Divide the dough into 4 equal parts.  Each part will make a pizza. The size of the pizza will depend on how thick you like your pizza dough.
  • Flat out one section at a time
  • Add toppings and lightly spray pan with olive oil.
  • Bake for 12-15 minutes at 350 degrees

Two Ingredient Dough Bagels

Oven

I won't say that I dislike cooking but I can say that I look for any short cuts I can find.  I cannot claim the 2 ingredient dough as my creation but I am definitely working to create on my own spins on this versatile dough and my gosh is it easy, which is right up my alley.
First I made the bagels and baked them in the oven.  I used a 6 donut pan from Target that I purchased for $12.99 - the 5% for the Target red card.
Here is that recipe:
  • 1 CUP Self rising flour from Walmart $1.38 for a large bag
  • 1 CUP 0%  Fage plain greek yogurt $5.38 for a 32ounce container
  • 1 egg (used for the egg wash)
*The Fage yogurt is almost double the price compared to normal store brand yogurt however it DOES make a difference.  Yogurts can be very wet, Fage is not.  I highly recommend getting the Fage. (I am not being paid by Fage)
Before working with the dough spray your hands lightly with olive oil or avocado oil and then lightly flour your hands and the space you will be working with the dough. Trust me the dough is sticky and this tip will help.
Once fully mixed, place the dough on a slightly floured surface, I used a plastic cutting board.

  • Pre-heat oven to 350 degrees.
  • Knead the dough to make sure the flour and Greek Yogurt is fully mixed.
  • Divide the dough into 4 equal parts for a normal size bagel. (You can make smaller bagels and skip using the pan.)  I made 4 at a time in my photo's
  • roll the dough into a "rope-style" and pinch the two ends. (You can use a little egg to help it stick)
  • Place in lightly sprayed pan
  • Brush the top of the bagels with egg.
  • Add seasoning.  A lot of people that use this recipe use "everything but the bagel" which you can find at Trader Joe's or on Amazon.  I personally just bought my own mix of seasoning.  I used garlic and a little fat-free parm. cheese on a few that my husband loved!
  • Place pan in oven and bake for 23-25 minutes.  I prefer my bagels "doughy" so I baked for 23 minutes.

Finished Product:

Total weight watchers points is 3 points for a regular size bagel.

Overnight Oats

Have you ever noticed that other ethnic groups are rarely obese?  Some of it is genetics, but contrary to popular believe you are not "doomed" to be fat.  You may be predisposed but ANYONE can lose weight.
Americans save their largest meals for the end of the day.  Hmmm....Think about it.  We have less active time after dinner.  We usually are exhausted from work, or taking care of a household and children and plop ourselves on the couch until we drag our bodies to bed.
In other countries their largest meals of the day is breakfast followed by lunch and dinner is the lightest.  When I am able to follow this, I have more success with my weight loss.
I need something that is going to fill me up and makes me feel satisfied for as long as possible.  The snacking calories add up quickly.
I wanted to share my favorite breakfast that is quick, healthy, and sustains me until my lunch hour which is normally around 1-2 p.m.
I make 2-3 of these at a time and grab them in the morning before work.
I bought the canning jars and lids at Target. they are dishwasher safe and can be reused over and over again.
Ingredients:
  • Oats (quick oats)
  • Peanut butter ( I used PB2 but a natural low sodium PB will suffice)
  • Yogurt ( I use greek, low fat vanilla)
  • Chia seed
  • Cinnamon
  • Almond milk ( I use either almond milk low fat vanilla, or almond/cashew vanilla)
  • Fruit to top (this can be blueberries, strawberries, banana, granola, peaches, etc)
Supplies:
  • Small canning jar
  • Lids (the lids canning jars from with are meant for a one time use so I suggest buying replacement lids)

Steps:
  1. Place 1/8 cup of overnights oats in bottom of clean jar
  2. Add 1/8 cup of almond milk
  3. Add 1/2 cup of a low fat vanilla yogurt
  4. Add 1 tablespoon of PB2 or Low sodium natural peanut butter
  5. Add 1 tsp. of chia seed
  6. slice up fruit and place on top
  7. sprinkle cinnamon.
  8. Place in refrigerator overnight
